Here's a tasty way to have tacos without the meat. I actually found a few recipes that I liked and I combined them to create this recipe. This is a great source of omega-3 fatty acids which great for heart health.
The "meat" in this taco is actually ground walnuts. I promise it is tasty. I like using romaine lettuce leaves instead of a tortilla, but if you want gluten free use corn tortilla or any other large leafy green. I have avocado, fresh tomatoes and cilantro as a topping but use any of your favorite toppings like fresh salsa, onions, peppers, carrots, etc.

Ingredients
- 1 cup raw walnuts
- 1 each small garlic clove, minced
- 1 juice 1/2 lemon or lime
- 2 tsp Bragg's liquid aminos
- 1 tsp cumin
- 1 tsp coriander
- 1 pinch paprika
- 1 pinch salt & pepper
- 1 each head romaine lettuce washed, leaves separated and kept whole
- 1/4 cup cherry or grape tomatoes halved
- 1 each avocado diced into cubes
- 1 pinch cilantro, chopped use as much as your tastebuds like
Servings: people
Instructions
- Place walnuts into a food processor (or nut chopper), pulse until finely chopped.
- Place chopped walnuts into a bowl with garlic, lemon or lime juice, liquid aminos, cumin, coriander and paprika. Mix together.
- Add salt and pepper to taste.
- Scoop the filling onto a lettuce leaf and top with tomatoes, avocado and cilantro (or any topping of your choice). Roll up and enjoy!
