I adapted this recipe from MindBodyGreen. It's great to get the chocolate taste along with the great healthy fat that avocado has.
Ingredients
- 1 large avocado
- 1/4 cup raw cocoa powder (I use cacao powder)
- 1/4 cup coconut milk or almond milk
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- stevia (taste first, then add desired amount)

Instructions
- Puree the avocado until smooth. I like to use my immersion blender. (use a tall and narrow bowl)
- Mix the cocoa powder and milk together. Once it is combined then add to the avocado.
- Stir in vanilla, cinnamon and stevia if using. Optional: add chia seeds.
- Transfer pudding into individual bowl and store covered in fridge. When ready to eat top with chopped nuts, seeds, sliced berries, etc.
