This is a great main dish recipe to replace a pasta dish or you can use it as a side dish to a piece of grilled chicken. It is perfect for late Summer and early Fall since tomatoes and zucchini are abundant in your garden or the Farmer's Market.

  1. In a large non-stick pan, heat the oil over high heat. Add garlic and cook for about 30 seconds, garlic should turn slightly golden. Add the sliced tomatoes, red pepper flakes, salt and pepper. Reduce the heat to low. Simmer, covered, until the tomatoes soften, about 15 minutes. There should be some liquid in there, if not add small amount of water or chicken broth.
  2. Increase heat to medium-high, stir in the spiraled zucchini and basil. Cook for about 2-3 minutes while stirring to incorporate the tomatoes and sauce. Serve hot. Optional: top with some grated parmesan cheese.
