Prep time:  5 minutes
Prep notes:  if using dried black beans, add time to soak
Cooking time:  20 minutes
Yields: 6 people
Ingredients:

1 can of organic black beans (prefer BPA free) (if using dried black beans you will need 1.5 cups)
1/4 cup melted coconut oil (or grass fed organic butter)
1/4 cup dutched processed cocoa powder
2.5 tsp. vanilla extract
1/4 cup of coconut sugar
Dash of sea salt
3 eggs (lightly beaten)
1/2 cup of chopped dark chocolate (70% or greater)*
chopped walnuts (optional)
1 TBS almond butter (optional)

Directions:

1. Preheat oven to 350F.  Grease an 8-inch pan (use grass-fed butter or coconut oil).

2. If using canned black beans, drain and rinse.  Place the beans, oil, cocoa powder, coconut sugar, vanilla and salt into a blender or food processor and blend until smooth.

3. Fold in eggs and chocolate pieces.

4. Pour into the greased pan and bake for about 20 minutes, don't overbake and watch closely.

Let cool and cut into desired sizes.
