Ingredients
- 1 each sweet potato
- 1/3 cup almond flour
- 2 each large eggs
- 1/2 tsp. baking powder
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 2 TBSP maple syrup make sure its real maple syrup

Instructions
- Peel the skin of sweet potato. Cut into bite size chunks. Place in pot of water and cook until tender with your fork. When sweet potatoes are tender enough to mash, drain out the water and put sweet potatoes in a bowl and mash with potato masher until smooth.
- Measure 1/2 cup of mashed sweet potato and combine all ingredients in a large bowl or food processor and mix until well blended. (note: make sure sweet potatoes are slightly cooled before adding the eggs)
- Measure about 1/4 cup of batter onto skillet. It should be thick enough to hold a shape. Watch for bubbles on surface before flipping. Flip and cook the other side for about 2 minutes.
- Serve with your favorite topping. I toasted some pecans in a pan and crumbled them on top.
